Chocolate Muffins
A muffin is a type of cake that is usually baked with baking powder or baking soda as an enzyme. It has balloon-like properties. It holds air and expands with tension, but it doesn't burst.
This is a very good chocolate pancake recipe. Thick chocolate with sweet muffins, this taste is just too tempting! Sweet and soft muffins will put you in a good mood in no time.
Consider the taste of children, can be appropriate to increase condensed milk, reduce baking powder.
The materials
Low gluten powder 140 grams
Cocoa powder (valrhona) 40g
Caster sugar (Taikoo yellow cane sugar) 20g
Sea salt 2 g
Milk chocolate (or dark chocolate) 80g
20 grams of unsalted butter
Condensed milk (not added) 20g
Milk (adjusted according to batter) 240g (up to 160g)
Eggs (about 60g with shell) 2
3 to 5 grams of baking powder
Homemade vanilla extract 3 grams
1. Weigh 80 grams of chocolate and 20 grams of butter. Use milk chocolate for a sweeter taste and dark chocolate for a richer taste.
2. Stir over low heat until chocolate and butter melt.
3. Let it cool slightly and add two eggs. Stir well.
4. Weigh 20 g sugar and 2 g sea salt. If condensed milk is not used, it can be increased to 40 grams of sugar.
5. Add 240g milk, 20g condensed milk and 3g homemade vanilla extract and stir well. If you don't have vanilla extract, you can use lemon juice or other spices of your choice.
6.140g low-gluten powder 5g baking powder, 40g cocoa powder sifted, add the batter from the previous step.
7. Blend it into a very smooth chocolate batter.
8. Fill silicone cups with batter. It's easy to pour the batter while you cook the muffins. Say 1,2,3,4 to yourself as you pour, so the pancakes are a similar size.
9. Heat a non-stick skillet and pour in about the same size of batter (silicone cups make it easy to pour; use a spatula to assist). Keep the heat low all the time, and when the batter has a large bubble, turn it over. You can fry three at a time. You can cover the pot so that it cooks faster.
10. Also, a small heat-resistant spatula can be used to turn it over, which is especially easy to turn.
11. Then fold it up and serve it. Serve with condensed milk, chocolate sauce, honey or maple syrup, or jam. You can also cut a knob of butter and put it on top, or sprinkle it with icing sugar for a more delicate look.
Tips:
If you don't have a silicone cup, you have to use a spoon. But generally speaking, silicone cups are much better than spoons.
Make sure you use a non-stick frying pan. You don't need to put the oil in beforehand, but make sure you heat the pan beforehand!
About the thickness of the batter, a thinner one is easier to make, and it will flow more smoothly after mixing. It's hard to cook when the batter is too thick.
