Orleans Chicken Pizza
Ingredient preparation
For the pizza crust part:
High gluten flour 105g
Sugar 6g
Yeast 1.5g
Salt 2 g
Water 50 g
Butter 15g
For the pizza sauce part:
Half an onion.
One tomato.
Three cloves of garlic.
Two tablespoons of tomato sauce.
Half a spoonful of salt.
Half a spoonful of sugar.
Black pepper to taste
For the pizza topping:
One chicken leg.
Corn kernels to taste
Onions to taste
Green and red peppers to taste
Amount of mozzarella cheese
Method
1、Make the pizza crust first
Mix all the ingredients except the butter into a flocculent mixture, add the butter and knead to form a smooth dough, then ferment until double in size.
2、Pizza sauce part
Cut the tomatoes with a cross on the surface of the knife, scald them with boiling water to remove the skin, cut into small dice, chop the onion and garlic, then heat the oil in a pan, add the garlic and chopped onion, stir fry the tomatoes, add salt, sugar, tomato paste, pepper and cook until thick and the tomatoes are almost melted.
3: Spread the pizza sauce on the pizza crust, then sprinkle with a layer of grated mozzarella, followed by the corn kernels, chicken thighs, onion strips, green and red pepper strips, and finish with another layer of grated mozzarella and a squeeze of salsa.
4: Preheat the oven to 200℃ for 5 minutes in advance, put the pizza in the middle of the oven, and bake at 200℃ for 16 minutes.
Diced chicken and mushroom and vegetable pizza
Crust ingredients.
High gluten flour 100g
Low gluten flour 25g
Sugar 10g
Water 70g
Salt 2g
Yeast 2g
Olive oil 8 g
Filling ingredients.
Grated cheese 120g
Shiitake mushrooms 4-5
Chicken 150g
Soy sauce 1 tbsp
Cracked black pepper to taste
A pinch of sea salt
Green pepper 20g
Corn kernels 20g
Onion 30g
pizza sauce to taste
Method:
1: Mix the ingredients for the crust and knead the dough until doubled in size, press and roll out to a crust about 22cm in diameter, equivalent to a 9-inch pizza.
2: Place in a baking tray and poke holes in the top with a fork. Bake in the middle of the oven at 180 degrees for 12-15 minutes.
3: Cut the chicken into small squares with a spoonful of soy sauce and sea salt, mix well and marinate for ten minutes. Cut up the vegetables and set them aside. Sauté the chicken until browned and raw.
4: Brush the crust with the pizza sauce, sprinkle with a layer of grated mozzarella, add the chicken, mushrooms, onions, peppers, carrots, and corn kernels, and finally sprinkle with grated cheese.
5: Place in the middle of the oven and bake at 200 degrees for 15-20 minutes, until the cheese has melted.
Fresh Prawn Pizza
Ingredients.
Crust:
Flour 130g
Warm water 70g
Yeast 2g
Sugar 5g
Butter 10g
Filling:
Crumbled mozzarella 100g
Fresh prawns, and pizza sauce to taste
Method.
1Put the flour, yeast, and sugar in a container, add the warm water, and stir before kneading into a dough, then add the softened butter and knead until smooth, leave to ferment until double in size.
2 During fermentation, shell the prawns and open their backs. Dice the carrots and blanch them, then set aside.
3 Roll out the dough into a round loaf and place on a baking tray with a fork insert and leave to rise for 10 minutes.
4 Brush the crust with pizza sauce, sprinkle with a layer of grated cheese, sprinkle with another layer of grated cheese, sprinkle the diced green beans and carrots on top, and finish with another layer of grated cheese
5 Preheat the oven and place the baking tray in the oven for 20 minutes at 180 degrees.
