French Savory Pie

French Savory Pie Recipe
Ingredients:
Crust:
115g fermented butter
167g low-gluten flour
6g egg yolk
30ml fine sugar
3g salt
Filling:
2 hard-boiled eggs
100g broccoli
1/2 onion
3 mushrooms
100g light cream
20g milk
40g whole egg mixture
2g salt
a moderate amount of black pepper
Instructions:
Soften the butter at room temperature and sift the low-gluten flour.
In a separate bowl, mix the egg yolk and water. Add sugar and salt and stir until melted, then chill in the refrigerator.
In a large bowl, press the butter with a spatula until soft. Add the sifted flour and press until the mixture forms yellow granules.
Add the chilled egg yolk mixture and use a spatula to press it into a dough. Wrap in plastic wrap and refrigerate for 2 hours or more.
Roll out the dough to a thickness of 2cm, place on a pie plate, poke holes with a fork and bake in a preheated oven at 200°F for 25 minutes.
While the pie crust is baking, prepare the filling. Blanch the broccoli, dice the onion, wash and slice the mushrooms, and slice the hard-boiled eggs.
Heat the light cream and milk mixture. Gradually add the whole egg mixture and mix with a hand whisk. Strain the mixture and season with salt and black pepper to taste.
Spread the filling ingredients on the baked pie crust, pour the filling mixture, and bake in a preheated oven at 180°F for 25 minutes or until the surface is solid.
Tips:
Soften the butter at room temperature.
Adjust the salt in the filling to your desired level of saltiness.
Bake the pie crust first, as the baking time is longer.
Soften the refrigerated pie crust with a rolling pin before rolling it out.
Press the pie crust into the mold to avoid air pockets.
Optional: To add flavor to the savory crust, try adding spices such as poppy seeds and nutmeg.
