Ingredients

- 1 cup (110 g) of toasted pecans
Hot Fudge Sauce:
- ½ cup (113 g) of butter
- 2¼ cups (270 g) of powdered sugar
- 6 ounces (170 g) of bitter chocolate
- ⅔ cup (151 g) of evaporated milk
- ¼ teaspoon of salt
- 1 teaspoon of vanilla extract
- Heavy cream, if needed
Instructions
Ice Cream Balls:
1. Scoop out 2 cups (260 g) of ice cream.
2. Using plastic gloves, swiftly shape the ice cream into a rough ball and place it onto a mound of 1 cup (110 g) of chopped toasted pecans.
3. Roll the ice cream in the nuts until the ball is entirely coated, then return it to the freezer to firm up.
4. Wrap the ice cream balls tightly for storage.
Hot Fudge Sauce:
1. In a 2-quart Pyrex batter bowl, microwave ½ cup (113 g) of butter on HIGH for 1 minute and 15 seconds until melted.

3. Place 6 ounces (170 g) of bitter chocolate on top of the sugar mixture in the bowl and pour ⅔ cup (151 g) of evaporated milk over all. Do not stir.
4. Microwave on MEDIUM for 8 minutes, checking after 5 or 6 minutes. The chocolate should be just melted—no more. Alternatively, heat in a double boiler for 30 minutes.
5. Remove from the microwave and add ¼ teaspoon of salt and 1 teaspoon of vanilla extract. Beat slowly at first, then more vigorously until silky smooth. You can use a portable mixer or a whisk.
6. If the sauce is too thick, gradually add heavy cream, 1 tablespoon at a time, but avoid adding water.
