Mousse Cream Cake Recipe
Ingredients:
For the Cake Base:
• 1 cup all-purpose flour (120 gr)
• 1/2 cup sugar (100 gr)
• 3 eggs
• 1/4 cup melted butter (56 gr)
• 1 teaspoon vanilla extract
• 1/4 teaspoon baking powder
• Pinch of salt
For the Mousse:
• 1 1/2 cups heavy whipping cream (180 gr)
• 1/2 cup powdered sugar (65 gr)
• 1 teaspoon vanilla extract
• 4 oz. white or dark chocolate (depending on your flavor preference) (120 gr)
• 1/2 cup milk (120 gr)
• 1 tablespoon gelatin (optional for firmness)
For the Cream Topping:
• 1 cup heavy cream (230 gr)
• 2 tablespoons powdered sugar
• 1 teaspoon vanilla extract
Instructions:
1. Prepare the Cake Base:
• Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
• In a bowl, beat eggs and sugar until light and fluffy. Add the melted butter and vanilla extract, mixing well.
• In a separate bowl, sift the flour, baking powder, and salt altogether. Gradually add the dry ingredients to the wet mixture, folding until smooth.
• Pour the batter into the cake pan we have previously prepared and bake for 20-25 minutes. Tip: insert a toothpick into the until the center comes out clean.
• Let the cake cool completely before removing it from the pan.
2. Make the Mousse:
• In a small saucepan, heat the milk and chocolate together, stirring until melted and smooth.
• In a separate bowl, whip the heavy cream and powdered sugar together until it becomes stiff.
• Then add the vanilla extract and gently fold in the melted chocolate mixture.
• If you want extra firmness, dissolve the gelatin in warm water and add it to the mousse mixture. Mix gently to combine.
• Chill the mousse in the fridge for about 1 hour until it firms up a bit.
3. Prepare the Cream Topping:
• Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
4. Assemble the Cake:
• Once the cake is cool, place it on a serving platter. Spread the mousse evenly over the cake, smoothing it out with a spatula.
