Lemon Pie
Not only can lemons be used for juice, but they can also be made into a soft and sweet lemon pie.
Here's how to make lemon pie.
Ingredients:
Pie crust:
Butter 60g
Sugar 25g
Egg yolk Half
90g of flour
Almond flour 20g

2 lemons
3 eggs

Soften 60g butter and beat with 20g sugar until white

Form a smooth dough, wrap it in cling film and chill in the fridge for 20 minutes

Poke holes with a fork and bake in the oven at 160 degrees for about 10 minutes to lightly brown

While the crust is baking, make the pie mixture. Beat the two eggs and half of the egg yolks together with 80g of sugar, 150 ml of light cream, the juice of one lemon, and the zest of one lemon and mix well.

Pour the pie mixture into the oven and bake at 160 degrees for 20-25 minutes

Halfway through the baking time, slice the remaining lemon and add it to the pie.

1. Roll out the sweet pie crust to a thickness of 0.4cm, shape it into a pie plate and leave it to relax for 15 minutes.

6. Mix the remaining pastry with the egg yolks and milk in batches.

9. Pour the filling into the pie crust about an eighth of the way up and sprinkle the top evenly with the 40g of puff pastry and fresh blueberries that have been kept in the fridge.
10. Bake in the oven at 180/200°C for about 35-40 minutes until the top is golden brown.
